Gluten Free Baking 101

Gluten free baking can be intimidating to newbies, but here's a little secret: It's actually more fun than baking with wheat.

Why? Because you have so many options and can really get your creative, inner artist, fancy pants baking cap on. Once you learn all the tips and tricks, you'll become as obsessed with gluten free baking as the rest of us crazy bloggers are.

But while you're learning (and yes, you will bake some bricks along the way), let me save you some time and teach you a little of what I've learned. I co-authored two gluten free baking guides (scroll down below) in 2012, and you can find even more in-depth information - plus awesome recipes - there. But before you even think about buying the books, let's start really simple with some recipes and how-to posts.

What the heck do I do with all these flours?
Confused about the difference between amaranth, sorghum, white rice flour, and all the rest? In my baking guides, I break the flours down BY CHAPTER, with each chapter devoted to its own flour. There are recipes specifically for almond flour. Recipes for coconut flour. Recipes for garbanzo bean flour. You get the idea. But here I'm going to give you a quick run down of each flour, with its flavor, texture, and best flours to substitute with.

Pancakes and Waffles
Everybody needs a good pancake and waffle recipe for Sunday mornings. I made over 24 batches of batter so that I could develop the easiest and best gluten free pancake/waffle mix you will ever try. No matter what type of gluten free flours or mixes you have at home, you can make this recipe. The one thing I ask is that you read all the guidelines before starting. It's true - Gluten free breads that you purchase at the store are not always that great. And there are a lot of not-so-spectacular recipes out there. But that's what makes the good recipes so valuable. I have many yeast bread recipes in my baking guides for when you're ready to get real fancy, but what I want to share here are the simple recipes. The quick breads and muffins that will make you fall in love with being gluten free.

I have a lot of dessert recipes, but what I want to share with you here are the super easy recipes. The ones you could make blindfolded. I'm going to start with a basic cookie "guideline" recipe. Much like my pancake and waffle guide, it's a recipe that you can adapt to your tastebuds.
