Marie's Musings: How Much Coffee is Too Much?

Hello world! Hope you’re all having an amazing week. Not too much to report on my end. After having a rough couple of weeks I think I am finally starting to settle back into a routine.

After taking an extended break, I’m now working far too much, which is actually a good thing. Being productive is always good for my mental health, and of course, the bills will not pay themselves. It’s been nice getting back to work but unfortunately, it’s completely destroyed any semblance of a sleep schedule I used to have.

The initial boost of energy I got when switching back to veganism and then going gluten free has since been replaced by needing melatonin to sleep at night and coffee to help wake up in the mornings and get me through the day. I can’t say that I can attribute this lethargy to diet; I’ve been averaging 4-5 hours of sleep a night so at this point I blame it on what I’m doing rather than what I’m putting into my body.

I had inadvertently quit coffee when I started the gluten free challenge but for the past week I’ve fallen back on my habit full force (think 6-9 servings of instant coffee a day). I do very much miss my french vanilla creamer but black coffee is fine, too. I have noticed that my insides absolutely abhor the vast quantities of caffeine I have been consuming. I wake up feeling terribly gassy and bloated, something I haven’t experienced since I was still consuming dairy. I am still keeping up with the coffee, though, because at this point working is more important to me than feeling good. I know that sounds awful. I don’t exactly feel bad. Just, not as awesome as when I first started the challenge. My hope is that when I’m caught up with work and can get back to a more sustainable work schedule I can eliminate coffee from my diet once again, or at least not rely on it as much as I do now.

So I made this great discovery last week: Snack Pack juicy gels! They are just like jello except without the gelatin, which makes them gluten free and vegan as well. The sugar free options are only 5 or 10 calories depending on the flavor- so far I like orange the best. I hadn’t eaten jello in ages due to not wanting to consume gelatin, but these gel packs have been a great way to curb cravings when I want something sweet but am not exactly hungry. Oh, and a 4 pack is only $1 from the dollar store. Yes, I buy much of my food from the dollar store. I admit it. Don’t judge me. But seriously I would definitely recommend this as a great snack for anyone who’s looking for a low calorie, gluten free snack that’s quick and portable.

I also got a delivery in the mail (sent from Nasoya for being in the gluten free challenge) of two jars of “nayonaise,” which, as it sounds, is vegan mayonnaise. I have no idea what I am supposed to do with this. Mayonnaise was actually my all time favorite condiment, but now that I am no longer eating my favorite cheese and mayo sandwiches on french rolls (man, I miss those!) I don’t know how to use this stuff? What else does one do with mayonnaise if not put it on sandwiches? I’ll have to come up with some creative recipe so I can tell you all if it’s as good as the real thing.

Hi Marie, Glad you are back to work and being productive. I understand about drinking coffee, using it to help. That's okay, you're doing good and I like reading about your stories.....happy or sad. Have a good week and take care.

Hi Marie,

you can use vegan mayo to make dips just like you would with dairy--vegan ranch dressing is super easy.

I couldn't figure out why I had trouble sleeping and waking, either, and I'm working with a dietician. She told me to eat a healthy snack before lunch and after lunch to keep my blood sugar regulated. I'm not allowed any caffeine at all since I have been diagnosed with IBS. I understand special diets--the low FODMAP diet is the one I'm on at the moment. Good luck to you! I am also gluten free and 90% plant based. :)
