This was my first week being gluten free in a very long time. I mean a very long time. On the one hand, it was so much easier than I thought it would be, but on the other hand, it was so much harder. I had a couple of things that happened that made my first week more difficult: a graduation party, a wake and funeral, and another graduation party. I had planned on doing better at the second graduation party, but then the wake and funeral happened, and I just didn't have time to plan ahead. I guess I am a little happy that I didn't totally follow through with completely eliminating gluten.
I did really well for the first part of the week. Before I went completely gluten free, my husband kept commenting that he didn't like my breathing at night. He kept telling me that I was snoring horrible and that I was having bad sleep apnea. Kind of stupid on my part, but I never thought that it could be attributed to gluten. It was stupid because my son had similar problems at three years old. It was to the point that we were planning on him having his tonsils and potentially his adenoids out. My husband talked to his doctor, who mentioned that we should look at allergens first and see if that helped. For him, dairy made a huge difference but my husband's doctor mentioned that gluten could be a cause too.
I spent money on a blood test to find out my food sensitivities and had already known that gluten was one thing I was sensitive to. However, I didn't think that gluten could be a reason for my sleep apnea. This week my husband told me I was sounding better when I sleep.
Then Saturday happened. I wasn't horrible, but because of craziness at the end of the week, I didn't do as well at the second graduation party. This morning I asked my husband if he noticed anything, and he said my breathing wasn't as good as it was in the beginning of the week.
The other thing that I noticed was my decreased fogginess, and increased energy and overall motivation in my daily life. I have three kids; My oldest is 5 and my twins are 10 1/2 months younger than him. My oldest has autism. Life is just a little crazy at my house, but this week life seemed a little more doable. I am hoping that it is because of my diet changes. How nice would it be to have more energy, stamina, and awareness? Don't get me wrong, I am still exhausted by the end of the night. But I feel so much better during the day! Another plus - My oldest son (who is also sensitive to gluten) is starting his day off improved and he seems better too.
I am more motivated to keep this up. I am thinking about what I am putting into my mouth instead of just eating it because my mouth is telling me it wants the taste. I am thinking about what I really want and what I really need. I have lost a couple of pounds (I still have more than enough to lose) which is a great side effect of eating this way. I am also not feeling bloated and stuffed after eating. As much as I miss my friends (as another challenger put it), I am so happy to know that this way of eating seems to really make me feel better. I'm not happy that I didn't eat completely gluten free, but I am happy that it helped to show me how important it is for me to continue with this challenge and get my health back.
