I'm very excited to be joining you today as part of Home For The Holidays, a special event created this month by one of my favorite bloggers, Shirley Braden, of Gluten Free Easily. Every day until December 23rd, a different blogger will be sharing a favorite holiday dish (gluten-free of course). Yesterday, Ricki at Diet, Dessert and Dogs shared her recipe for Chocolate Mint Truffles. Tomorrow, Stephanie at Gluten Free By Nature will be bringing us a special holiday treat. Three prizes will be given away each day, and thanks to Shirley and the generosity of this event's sponsors, there are three crazy awesome grand prizes. Now, before we get to the giveaways, I want to share my holiday recipe with you. I've been baking a lot of cookies for my upcoming gluten-free baking guides with Brittany Angell. But today, I wanted to make something close to home. My grandma always made cream cheese cookies for Christmas. For those of you who have never had a cream cheese cookie, they're soft and buttery and have just a hint of that sour cream cheese flavor. I wish I could describe them for you better, but that's the best I can do. Suffice it to say, if you've never had a cream cheese cookie, you're missing out. But now you don't have to! These cookies taste remarkably similar to my grandma's, and are free from gluten, dairy, eggs and soy. They can also be made without refined sugars. I made them a few times with different types of sugar, and I'll admit I preferred the cookies made with refined sugar...they tasted more like my grandma's cookies. But I also loved the cookies made with coconut palm sugar. Coconut palm sugar has a deep flavor with molasses undertones, but while I love the texture and flavor of those cookies, the palm sugar has a tendency to overwhelm the more subtle flavors of the cream cheese. So if you want a "cream cheese cookie," I would use regular sugar or perhaps something like xylitol. But if you like to use coconut palm sugar and just want a tasty cookie, go ahead and use palm sugar.
Cream Cheese Cookies (Gluten-Free, Soy-Free, Vegan) (Print Friendly Option)
Ingredients:
1 cup raw cashews, soaked in water 4 hours to overnight
2 teaspoons apple cider vinegar
2 teaspoons lemon juice
1/2 cup Spectrum Organic Palm Shortening
1/2 cup granulated sugar*
1 teaspoon pure vanilla extract
zest of one medium lemon
1/3 cup coconut flour (40 grams)
1/3 cup white rice flour (52 grams)
1/3 cup tapioca starch (40 grams)
1/2 teaspoon fine grain sea salt
1/4 teaspoon baking soda
2 tablespoons psyllium whole husks**
6 tablespoons boiling water
Directions:
- Preheat the oven to 350 degrees F. Lightly grease 2 cookie sheets.
- Rinse and drain the cashews, then blend them in a food processor for about 30 seconds. Add the apple cider vinegar, lemon juice, shortening, sugar, vanilla, and lemon zest. Blend until smooth.
- In a medium sized bowl, whisk together the coconut flour, white rice flour, tapioca starch, salt, and baking soda. Set aside.
- Pour boiling water over psyllium husks in a small bowl, whisking the whole time to prevent clumping. Pour quickly into the food processor and blend. Add the flour mixture and blend until smooth, scraping down the sides if necessary.
- Drop by the scant tablespoon onto the cookie sheet about 2 inches apart or use a piping bag to shape cookies. Bake for 12 minutes. Let cool on the cookie sheet. They'll be softer when warm and need to cool before they can be moved.
*You can use any granulated sugar in this recipe, such as regular refined cane sugar or coconut palm sugar. Coconut palm sugar will darken the cookies to a caramel color, as shown in some of the photos above. The palm sugar also gives them a caramel undertone in flavor, much like brown sugar does. If you prefer the white color of traditional cream cheese cookies, you can use any white granulated sugar or sugar substitute, such as cane sugar or xylitol. Regular white table sugar will make them taste more like the cream cheese cookies you remember. Your choice...they're delicious both ways!
**Psyllium Whole Husks are different from psyllium husk powder. Make sure to purchase the whole husks, which can usually be found in your grocery store or drug store in the supplement aisle. The brand I buy is Yerba Prima. I would have tried these with ground chia seeds as well, but I ran out. I suspect that they would work fine with 2 tablespoons of GROUND chia seeds, but I can't say for sure. If you end up trying this, I would love it if you came back and left a comment letting me know how they turned out!

Not commenting to win - just want to say thanks for the great cookie recipes... two friends of mine are off the dairy and eggs... and while I have lived gluten-free for over 40 years... I'm finding baking difficult without these two ingredients. Not being dairy or egg free... I'm interested in learning more about the cream cheese cookies your grandmother made!!
I am relatively new to grain-free sugar-free living and so haven't figured out what my all-time favorite holiday meal/dessert is yet... but I have totally fallen in love with a raw herbed pecan stuffing recipe that I found and have come across a pretty awesome pumpkin pie recipe as well. At the moment I am craving ginger cookies so am on the prowl for a great recipe and have a few promising leads to try!
My fave holiday dish....any dessert, really. Is that cheating? Ok, chocolate dipped pretzels rolled in whatever!

I've never tried cream cheese cookies. They look like they have a great texture.
I also do not have a new favorite holiday dish yet. In my previous life, I think I'm going to have to say it was homemade fudge- the recipe on the side of the marshmallow creme jar, with tons of sugar and made with melted chocolate chips. Yeah, we won't be making that this year. I'm feeling a lot better having gone GF and DF, but I haven't gotten so far as having a new holiday favorite.
Suzanne, if you have whole psyllium husks, just go ahead and use only those as the recipe calls for. But if you don't have them or prefer to try chia, try all ground chia seeds instead.
Growing up, I loved pumpkin pie during the holidays, but since going gluten free I haven't tried very many baked goods so I don't know yet.

My favorite holiday dish is steamed cranberry pudding with golden sauce, which my grandmother always made for us at Christmastime. It is warm, tender, and sweet- it is the perfect comfort food. We have such fond memories of my grandmother serving us the pudding. She would always hide a coin or two (sterilized of course) under the pudding for some lucky people to find. This year, I have to create a new gluten-free, refined sugar-free version so that my family can continue to enjoy this special dish!

Eggnog french toast!
My all-time fav Christmas treat is Nanaimo Bars and it's easy to make them them g-free and vegan -- so delish! I have a question about the Spectrum Palm Shortening - does it contain soy, and would Earth Balance buttery spread work instead in this recipe? Looks great!
Thanks for the tip on the possibly over-powering nature of coconut palm sugar, I'm moving into using it and appreciate all the tips I can get.

Favorite holiday dish... Hmm... They've changed so much over the years as my mother has tried to find her own dietary solutions, but I think I've started to love the gluten free stuffing that I make.
My favorite holiday dish is the turkey at Thanksgiving. My family used to also have turkey at Christmas, and those were the only two times a year we had it. No special prep - I just liked the flavor of the meat itself.

The treat that most gets me in the mood for the holidays is actually a beverage. It is not the holiday season until I've enjoyed a lovely mug of hot cocoa with a splash of peppermint schnapps. This usually takes place on my couch curled up in my footie pajamas watching Love Actually.
As far as foods go, I adore acorn squash with a pat of goat's milk butter and a sprinkle of brown sugar. Delicious!

Hi Iris; pretty cookies! My favorite dish for the holidays is homemade tamales. We live in the Sonoran desert, and I love spicy Mexican food for any occasion.
Since going GF, I also discovered a corn allergy, which is tragic from a Mexican food standpoint. My savvy mom has offered to concoct a rice masa tamale for me.

Heather, Spectrum Organic Palm Shortening is soy free. I wouldn't recommend Earth Balance for these. In my experience, switching shortening for Earth Balance in cookies runs the risk of them spreading way too much and not holding together.
As someone lucky enough to live with the lovely Iris Higgins and therefore frequently have the opportunity to taste her delectable creations, I can sincerely attest to the deliciousness of these charming cookies!! Well since I am Jewish I will say potato pancakes but I like mixing it up with sweet potato and zuchini as well.
Scalloped potatoes made the old-fashioned way with a thick white sauce and heaps of extra-sharp cheddar cheese stirred in...*drool*!
Converting that to GF was easy, but this year I'll be making a DF version as well; wish me luck!

After all of the great recipes I have seen on all the great blogs, I am not sure what my favorite is! I guess my fall back would be GF pumpkin pie, but I see new favorites on the horizon!

My favorite dish would have to be either baked apples with homemade pumpkin butter or apple pie with an almond flour crust.
Meat pies are a favorite around here!
Hmm, that's a hard question. There are so many great holiday dishes! Nothing says Christmas to me like classic cutout Christmas cookies that we decorate as a family. And clam chowder... clam chowder is always our Christmas dinner. Thanks for the recipe and giveaway!

My favorite holiday food is povitica- a traditional nut roll/pastry that my family makes every year. (even though i can't eat it now, i still help make it!)

My favorite recipe *was* peanut butter balls...that is until this year now that I can't have gluten, peanut butter, and am not supposed to have sugar! Hmmmmm...time to find a new favorite! :)

My favaorite holiday dessert is pie. My mom always makes alot of wonderful pies and she is a much better piemaker than me. However, hers are not gluten or sugar free so I have been unable to eat them for the past few years. So glad though that so many of you talented cooks have given me some alternative desserts to make during the holidays. These cream cheese cookies sound delish!!

Does hot chocolate count as a favorite holiday dish? 'Cause I'd have to say that's it for me. Second choice would be cookies though. And no I can't narrow it down to just one. That's the beauty of it, they are so versatile, flavor combinations abound, perfect for cookie swaps. Decorating them adds a whole new facet of fun, especially with kids. Cookies and hot chocolate, that's the ticket, right there.

My favorite holiday dish would probably have to be lasagna. Ever since we started celebrating Christmas at my brother's house, my sis-in-law would always make lasagna for Christmas eve dinner. This year is my first GF holiday and so will also be my first year without lasagna (she has already made it with whole wheat pasta). This year I will discover a new favorite disch!
