Basil Mung Bean Salad

First off, I have to thank all of my wonderful readers for being so supportive! Your comments on my last post really made my week! I've been doing much better since then. I even made a chocolate cream pie for a party last night (using my maple cinnamon snickerdoodles as a cookie crumb base), and was able to handle the leftover cookies. Or I should say, I was able to tell my boyfriend that I couldn't handle them and to put them somewhere I wouldn't see them. Whatever works, right? For me, out of sight, out of mind.

I had intended a second post to end the elimination diet, but I realized there wasn't a whole lot more I needed to say. But I didn't want to leave you thinking I didn't learn anything important from it. In case you're dealing with similar issues, here are a few things I've figured out:
  • The headaches and fatigue improved considerably once I began taking vitamin D and a vitamin B complex.
  • Drinking 8-16 oz. of water first thing in the morning also helps with the headaches.
  • I'm definitely sensitive to maple syrup (which is too bad since I love those maple cinnamon snickerdoodles). Almonds might also be a problem, so I'm avoiding those for now, as well as all other nuts until I want to test them. Surprisingly, it doesn't seem to be all sugar that's a problem for me, but specifically maple syrup that gives me headaches. I guess that's a good thing...?
  • And cheese is not the best thing for my stomach. But I didn't need an elimination diet to tell me that. And for now, I still plan on eating it. Just not too often.
Although my elimination diet is officially over, I'm giving you another phase one recipe. My mung bean salad was probably my favorite meal to come out of the elimination diet. Before this, I had never tried mung beans. I wasn't actually sure what they were. But I found Truroots organic sprouted mung beans, and since I thought the price was decent, I bought a bag. I have to tell you, I haven't bothered to try any other brand since. I probably go through a bag a week, and I'm loving them! This recipe can be eaten hot, as a stir-fry, or cold the next day, which is what I usually do. It's my go-to meal for eating in between classes; It's so easy to make, I can whip it up in the morning if I have an extra ten minutes. Although, to be fair, I buy my cabbage and carrots already chopped up from the local fruit and vegetable stand. It would take longer if I had to cut them myself.

Basil Mung Bean Salad
Print-Friendly Option

1 cup mung beans, cooked according to directions on bag
5 cups diced or thinly sliced cabbage and carrots
1 large handful of fresh basil (about a cup), coarsely chopped
1 Tbsp. olive oil
1 avocado, sliced
sea salt to taste

  1. In a large skillet, heat the olive oil on medium low. Add the carrots and cabbage, and saute about 3 minutes.
  2. Add the mung beans, and continue to saute, stirring occasionally, until the cabbage is translucent, about 5 minutes.
  3. Add sea salt to taste.
  4. Stir in the basil and saute another minute.
  5. Take off the stove and add in the sliced avocado.
Serves 4.

I'm trying to decide what type of recipe to make for my next post. I've attempted many failed sugar-free muffin and cookie recipes this week, and am having a great time doing it. But until I feel back to normal with my eating, I should probably lay off the baking a bit. Sugar-free or sugar-full, I eat too many just the same. Spring is finally coming though, which makes me want to eat more fresh fruit. And this month's theme for Go Ahead Honey, It's Gluten Free is guiltless pleasures over at Simply Sugar & Gluten Free. So perhaps a guiltless fruit dessert is in order. Can I come up with one before the end of the month? I can certainly try...

Glad to hear your spirits have lifted! I think it's good to recognize the places where you have learned and moved forward as you have. That's what it's all about! :)

That recipe looks great - and it is candida-diet friendly...which, as of this weekend, is where i'm at. Thanks for posting it!

It's good that the elmination diet taught you a few things. One day we'll have the perfect diet and no IBS... hopefully! :)

I am just coming out of a really bad flare that began the last week of January. I even missed a few days of work which I never do. The bloating, fatigue, and pain in my left side didn't get much better, but I finally just shut up and quit talking about how bad I felt. I would drag myself to work and then count the minutes until I could return home and get back into my pajamas. I didn't say much to co-workers or family because even I recognized that I was sounding like a hypochondriac. Everyone has made concessions to my GF diet so hearing about more digestive upsets and the need for more restricted foods was not welcome.

Last week (after a really big hive outbreak) I decided that I needed to give my digestive system a huge break. I went on a very soft-food elimination diet to give my digestive system a break while eliminating the most common allergens. (I suspect that some tree nuts, peanuts, and dairy proteins are problematic.)

Bottom line is that I felt good this past Saturday for the first time in over a month!! It was such an odd feeling to feel energetic with no abdominal bloating and pain. It makes me sad to think how many of us feel sick for so long that we forget what it means to feel healthy. Pain becomes "normal" and only when it is gone do we realize how truly horrible we felt.

Dee, I'm so sorry you've been feeling so bad! But I know exactly what you mean about not wanting to complain and feeling like you sound like a hypochondriac. That's why I'm so grateful to be able to call my mom, who suffers from many of the same problems, and knows exactly what I'm going through. And why I'm grateful to fellow bloggers like you, who are trying to figure out how to feel better, just like I am.

Iris, glad you're feeling a bit better about the sweets! I had another "this is IT!" talk with myself yesterday, where I am going to once again strive to make peace with the sweets. I'm not going to swear myself off of them - that won't work in the long run - but I'm not going to be whipping up batches of tempting treats just to leave around the house either. It's gotten out of control for me, and I need to reign it back in and achieve balance.
Glad you found a few things out from your elimination diet though. That's good news - even if maple syrup is one of them. :(
And yummy salad! Those avocados look tempting.

Alta, I'm glad you're working on finding balance too. It can be hard when you want to make treats for your family (and to post on your blog), but know it's better for you if you don't have them around. If only I could just eat one...

I feel exactly as you do in the above comment about wanting to make treats for your family and blog, but not wanting them for yourself. If they are there, I will eat them. That's too bad about the maple syrup, but it's good that you found out.

I've never had mung beans, but your salad looks great.
