Sunshine Banana Muffins


After a sad couple of weeks without bananas, I added them back into my diet this week. I've also really missed baking, so I decided to make a gluten-free banana muffin. My limitations were that it had to be dairy free and free of any added sugars. So what to use? Bananas and sweet potatoes! The perfect combination of natural sweeteners. For inspiration, I went straight to The Gluten Free Goddess, and found a banana spice cake recipe that I could play around with. The result is a muffin so moist you would never guess it was made without added sugars. These are great for breakfast, although I'll admit I had them for dessert also.


Sunshine Banana Muffins
Print-Friendly Option

Ingredients:
1/4 cup raw sunflower seeds
1/4 cup sweet white sorghum flour
1/4 cup brown rice flour
1/2 tsp. baking soda
1/2 tsp. baking powder
3/4 tsp. ground cinnamon
1/8 tsp. sea salt
1 large egg
1/8 cup olive oil
1 baked medium sweet potato
2 medium ripe bananas

Directions:

  1. Preheat oven to 350 degrees and grease muffin tins. This recipe only makes 6 muffins, so double it if you want more.
  2. Process the sunflower seeds in a food processor, just until they start to mix. They'll add some crunch to your muffins if you don't process them too much.
  3. Put the rest of the dry ingredients (flours, baking soda, baking powder, cinnamon and sea salt) in a mixing bowl, and whisk together. Whisk in the sunflower seeds.
  4. Put the egg, olive oil, sweet potatoes, and bananas in the food processor (no need to wash it in between) and beat until thoroughly mixed, about 2 minutes. Pour in the dry mixture and process until completely mixed.
  5. Drop batter into muffin tins with a large spoon.
  6. Bake 25-30 minutes, until the outside just begins to brown and a knife inserted into the muffin comes out clean.

These muffins are my kind-of-wonderful! No gluten, dairy, OR sugar? LOVE IT! I'd never thought to do use sweet potato in muffins (even though I always use banana). Very cool recipe!

These look great! How would they turn out if the sunflower seeds were left out though? Are they necessary or do they just add flavor and/or texture?

@Muffin- I think they would be fine without the sunflower seeds. You could use any other nut that you like. I think pecans would taste great! Or just make up the difference by adding 1/4 cup of each type of flour.

I just found your blog via the recommendation from Ali over at WLN. I am starting the Elimination Diet tomorrow and while I am feeling prepared, I am also a bit in denial about what I am not going to be eating--and what I'll be eating instead.

I am kind of surprised that maple syrup, agave nectar and dates are allowed on the phase one list. I just read about how you had to hide them in the fridge and the back of the cupboard and knowing my fondness for sweet things, I should do the same. I love, love dates. Who needs caramels? (Well, when one can't have *real* caramels, dates are nice :-)).

It's nice hearing about your experiences. I am definitely looking forward to trying out the apple pie! That looks yummy.

I have a toddler and staying away from bananas is going to be a hard one for me. The temptation to just finish the other half of a banana is going to be hard.

I'm looking forward to reading more!

Wow, this is a truly gluten free whole grain muffin. I have yet to see one without starchy additions. Way to go Iris!

Yum --no gluten and fruit-sweetened! I'm hoping that I can omit the egg and just add a little extra banana to make these vegan -- most muffins & quick breads really come out the same (maybe a little extra moist) without that egg. Thanks.
